Tangy Sweet Cucumber Tomato Relish

Ingredients

* 1 small cucumber, peeled, seeded & diced
* 2 small tomatoes, seeded and diced
* 4 oz jar pimientos, diced
* 1/4 cup diced scallions
* 1/4 cup chopped fresh parsley

* 1/4 cup apple cider vinegar
* 2 tablespoons honey

Directions

1. Combine first 5 ingredients in a large glass bowl.
2. In a small saucepan, mix vinegar with honey and heat over medium heat just until heated through, stirring frequently. Let cool slightly.
3. Drizzle vinegar/honey sauce over cucumber/tomato mixture, tossing to combine.
4. Refrigerate for 30 minutes before serving.

Story

You can eat this right out of the bowl if you want! It's very tasty just like it is. However, you can serve it alongside grilled fish or even with tacos. It's just good no matter how you dish it up!
