Tart Apple and Chicken Curry Casserole |
Ingredients

* 4 cups chicken meat, cooked and diced
* 2 medium size tart apples, washed, cored, and cut into circles
* 1 small sweet onion, diced
* 1 stalk celery, diced
* 1 Tbsp vegetable oil
* 1/2 cup butter
* 2 Tbsp flour
* 1 cup chicken broth
* 1 Tbsp curry powder
* 6 cups cooked brown rice

Directions

1. Preheat oven to 350 degrees.
2. In large skillet, put onion, celery, and vegetable oil over medium heat. Cook until onion and celery starts to soften.
3. Add the butter and flour in the skillet and stir over medium heat for 1 minute. Slowly add the chicken broth, stirring continuously.
4. Turn off heat and add the curry powder to skillet and stir.
5. Coat a casserole dish with no-stick cooking spray, then add rice, top with chicken meat, and finally arrange apple circles on top.
6. Pour sauce from skillet evenly over the top, being sure to cover everything.
7. Put tin foil on casserole (or put cover on) and bake at 350 degrees for 30 minutes or until apples soften and mixture is bubbly hot.

Any time I see a recipe with tart apples and curry, I know it will be good! This is one of my favorites because it's easy and you don't overcook the apples. Very yummy!
You can use any tart apple, but the Granny Smith apples are my favorite. They are very pretty and make a nice presentation. For the chicken, I use a combination of dark and white meat. I think the dark meat adds a bit more flavor, but if you prefer white meat only, that works great, too.
Also, don't be afraid to add a little more curry powder if you want to.
