Tasty Turkey and Vegetable Combo

Ingredients

* 3 C water
* 1 1/2 C uncooked long-grain rice
* 1 TBSP low fat canola oil
* 1 C chopped green bell pepper
* 2 stalks celery, cut into 1-inch pieces
* 1 yellow onion, finely chopped
* 1 lb boneless turkey breast, cut into 1-inch cubes
* 1 (14.5 oz) can stewed tomatoes, drained

Directions

1. In medium saucepan over high heat bring water to a rapid boil.
2. Reduce heat to low and add rice.
3. Cover pan and cook about 15 minutes or until rice has cooked the way you like.
4. In a large frying pan heat oil.
5. Place celery, onion and green pepper in heated oil.
6. Cook until fork tender.
7. Add turkey.
8. Cook vegetables and turkey until the turkey is no longer pink.
9. Add tomatoes.
10. Cover frying pan and reduce heat to medium low.
11. Continue cooking 15 to 18 minutes or until turkey is cooked through.
12. Place turkey mixture over the rice and serve.
