Three Bean Salad

Ingredients

* 1/3 cup olive oil
* 1/2 cup cider vinegar
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 1/4 cup sugar (adjust for taste)
* 1/2 teaspoon celery sead
* 1 can cut green beans, rinsed & drained
* 1 can cut waxed beans, rinsed & drained
* 1 can red kidney beans, rinsed & drained
* 1 large carrot, thinly sliced
* 1 small onion, diced
* 1 green bell pepper, chopped

Directions

1. Combine first six ingredients in a large bowl and whisk until well blended.
2. Add remaining ingredients to salad dressing and gently mix.
3. Cover and refrigerate overnight.

Story

I've been making different varieties of three bean salads for some time now and have discovered that it's all about the embellishments. I like the added carrot, onion, and bell pepper which adds some needed CRUNCH to the salad. The salad dressing is simple, which makes it very family-friendly.
