Toasted Coconut and Curry Chicken Bites |
Ingredients

* 3/4 Cup flaked coconut - toasted as directed
* 1 (3 Oz) cream cheese, softened
* 2 TBSP mayonnaise
* 2 TBSP onion, minced
* 1 TBSP curry powder
* 1/4 tsp salt
* 1 Cup chicken, cooked, chopped and/or shredded

Directions

1. Preset the oven to 350 degrees.
2. Spread the coconut evenly onto an ungreased baking sheet.
3. Toast the coconut 12 minutes, stirring occasionally for even browning.
4. Remove the coconut and set aside to cool.
5. Place the cream cheese and mayonnaise in a bowl, stirring to combine.
6. Add the onion, curry powder, and salt and stir to combine.
7. Add the chicken, and mix until chicken is blended well with the other ingredients.
8. Roll the mixture into balls that are about 1 1/2 bites size.
9. Roll the balls through the toasted coconut being sure to cover completely.
10. Place the coated balls onto a wax paper covered baking sheet.
11. Cover with plastic wrap and refrigerate at least 2 hours or until very firm.

Don't skimp on the curry when you make these chicken appetizers. The toasted coconut and curry combination is what really makes these treats stand out. Be sure to cut your chicken up fine, shredding it a little. You don't want to bite into a big chunk of chicken. You want, instead, to bite into a nice, creamy mixture of all the flavors infusing the chicken. Enjoy!
