Toasted Sesame Chicken Pasta Salad

Ingredients

* 1/3 C rice vinegar
* 1/3 C soy sauce
* 1/3 C vegetable oil
* 1 tsp sesame oil
* 3 TBSP white sugar
* 1/2 tsp ground ginger
* 1/4 tsp black pepper
* 1/4 C sesame seeds, toasted
* 16 oz bow tie pasta, cooked and drained well
* 3 C chicken breast, cooked and shredded
* 1/2 yellow bell pepper cut in strips
* 1/2 red bell pepper cut in strips
* 1/3 C green onions, chopped
* 1/3 C fresh cilantro, chopped (optional)

Directions

1. In a small bowl blend together vinegar, soy sauce and both oils.
2. Whisk in the sugar, ginger, pepper and sesame seeds.
3. Pour the mixture over the pasta tossing to coat.
4. Fold in the chicken, bell peppers and green onion.
5. Sprinkle with the cilantro before serving.

Yummy! Chicken salad, pasta, toasted sesame seeds... it's all good. What makes it even better if the crunch of sweet bell peppers. This is one dish that will satisfy anyone and everyone in the family.
