Tomato Lentil Soup - Crock Pot

Ingredients

* 2 bags (16 oz each) lentils (soaked overnight in 1 quart of water).
* 1 envelope dry vegetable soup mix
* 2 cans (15 oz each) stewed tomatoes
* 1 cup frozen chopped onion
* 1 teaspoon salt
* 1 teaspoon minced garlic
* 2 tablespoons worcestershire sauce
* 3 quarts water

Directions

1. Soak the lentils in 1 quart of water overnight or at least 8 hours.
2. Drain lentils then put in crock pot.
3. Add the rest of the ingredients, including 3 quarts of water, and stir.
4. Cook, covered, on low for 10-12 hours.

Story

Just because a recipe is quick to put together and easy to make doesn't mean it's not healthy and good, too. Case in point... this Tomato Lentil Soup. Lentils are packed with nutrients that everybody needs. They are also inexpensive, so this soup is a great budget-stretcher. Lentils add a nice, thick texture to this tomato soup, and Worcestershire Sauce gives the flavor a real kick. Enjoy!
