Instead of frying your eggplant before assembling this dish, or worse, just putting the eggplant in raw, you coat the eggplant and bake them on a baking sheet until they're nice and golden brown. Eliminating the frying makes this dish a bit more figure friendly and healthy without losing the flavor.
You can really use any marinara or spaghetti sauce for this eggplant Parmesan casserole. You can even just use some crushed or diced tomatoes with added basil, oregano, and garlic powder if you like.
