Tropical Chicken - Crock Pot


* 6 lbs boneless skinless chicken breast halves
* 2 cans (16 oz each) pineapple slices, drained
* 2 cans (15 oz each) mandarin oranges, drained
* 16 oz jar maraschino cherries, drained
* 1/4 cup cornstarch
* 1/4 cup packed brown sugar
* 1 envelope chicken stir fry seasoning mix


1. Put everything, except chicken, in crock pot and mix well.
2. Add the chicken, burying it a little in the mixture.
3. Cook, covered, on low for 6-8 hours.


What's really great about this dish is that the kids are guaranteed to eat it! If you have a finicky eater in the house, just cover some chicken with fruit and watch them dig in.

When you drain the fruit, reserve the liquid for other treats, like blended slushies. You can also use the juice to marinade some chicken breasts later in the week. Just mix in a little olive oil and vinegar, whisk it up and let the chicken soak in the marinade for about 30 minutes. Add a little freshly ground ginger to the marinade for another layer of flavor.
