Tropical Shrimp Tacos


* 1/2 pineapple, cleaned and chopped
* 1 mango, cleaned and chopped
* 1/2 red bell pepper, cleaned and chopped
* 1/2 red onion, chopped
* 3 Tbsp cilantro leaves, chopped
* 3 Tbsp olive oil
* 1 Tbsp minced ginger root
* 1 jalapeno, chopped
* 2 limes, juiced
* 1 lb cooked medium size shrimp
* salt and black pepper


1. Mix all ingredients in glass bowl.
2. Let sit for 20 minutes, then spoon into taco shells or wrapped in tortillas.
3. Add spicy mayonnaise if desired.


This is an excellent way to surprise your family on "taco night." Taste before you spoon into the taco shells and add salt and pepper to taste. You may also want to sprinkle in just a few red pepper flakes if you want a bit more heat.

This recipe works just as well with other seafood, like crab meat or fish. Just cut cooked fish into small pieces, or shred it with a fork. Enjoy!

Note: If you can't find spicy mayonnaise in your local grocery store, it's easy to make. Mix Sriracha hot chili sauce in mayonnaise. Add a small bit of chili sauce at a time, taste, adjust, taste, adjust... Very yummy!
