Tropical Spice Fruit and Honey Chicken |
Ingredients

* 1 TBSP of margarine
* 8 chicken thighs (remove skin)
* 1/2 tsp pumpkin pie spice
* 1 C mixed dried fruit, chopped fine
* 1/3 C water
* 1/4 C honey

Directions

1. Melt the butter in a skillet, season the chicken with the pumpkin spice and lay in the skillet.
2. Cook 5 minutes, turning occasionally, or until browned.
3. Sprinkle the dried fruit over the chicken.
4. In a bowl, whisk together the water and honey and pour over the top of the chicken.
5. Cover the skillet and simmer 15 to 20 minutes or until the chicken is cooked completely through.

Can't get your kids interested in chicken for dinner? Try coating it with sweet spices and fruit! If you're like me you've got pumpkin pie spice in your pantry that never ever gets used up. This is one way to delight your family with a chicken dish and use up some of that spice.
If you don't have dried fruit readily available but do have canned or frozen fruit, go ahead and throw that in instead. Either way, make a batch of brown rice to go along with this dish and you have a complete meal that's tasty enough even for the pickiest eater.
