Turkey Chili with Mushrooms


*2 lbs. ground turkey
*1 onion, chopped
*2 (15 oz.) cans kidney beans, do not drain
*1 (28 oz.) can unsalted tomatoes, diced
*1 (8 oz) pkg. mushrooms, sliced
*6 ribs celery, chopped
*1 red bell pepper, chopped
*1 yellow bell pepper, chopped
*1 green bell pepper, chopped
*4 tsp. chili powder
*1 tsp. cayenne pepper


1. Crumble the turkey into a large soup pot.
2. Position the pot over medium heat.
3. Cook the turkey 5 minutes or until just beginning to brown.
4. Stir in the onion.
5. Cook 15 minutes or until the turkey is completely browned.
6. Dump the beans and the tomatoes into the pot.
7. Add the mushrooms and stir to combine the ingredients.
8. Stir in the celery and all three types of peppers.
9. Sprinkle the chili powder and cayenne pepper into the pot together.
10. Stir again being sure all the ingredients is mixed in well.
11. Place the stove heat on low.
12. Cook the chili for 3 hours or until as thick as you like, stirring often.


Ground turkey is a great substitute for ground beef for this chili. It's inexpensive, low fat, and it tastes great. You won't miss out on any of the good stuff because this chili is loaded with veggies and spices. I think the mushrooms are a wonderful addition and give the chili a nice texture and added flavor. Don't forget the toppings. You may want to dice up just a little red and green bell pepper, onion, and add some shredded cheese and sour cream to the table.
