*2 lbs. ground turkey
*1 onion, chopped
*2 (15 oz.) cans kidney beans, do not drain
*1 (28 oz.) can unsalted tomatoes, diced
*1 (8 oz) pkg. mushrooms, sliced
*6 ribs celery, chopped
*1 red bell pepper, chopped
*1 yellow bell pepper, chopped
*1 green bell pepper, chopped
*4 tsp. chili powder
*1 tsp. cayenne pepper

Ground turkey is a great substitute for ground beef for this chili. It's inexpensive, low fat, and it tastes great. You won't miss out on any of the good stuff because this chili is loaded with veggies and spices. I think the mushrooms are a wonderful addition and give the chili a nice texture and added flavor. Don't forget the toppings. You may want to dice up just a little red and green bell pepper, onion, and add some shredded cheese and sour cream to the table.
