1. In a large wok or frying pan over high heat add the oil and heat over medium-high heat until sizzling.
2. Toss in the leftover fresh vegetables from your crudite tray, including onions, green and red peppers, mushrooms, cauliflower, broccoli, celery, and anything else you want.
3. Add garlic and ginger, quickly stirring to combine.
4. Cook stirring constantly just until garlic is fragrant and vegetables are crisp-tender, about 3 to 4 minutes.
5. Add turkey, broth, and soy sauce and cook quickly, stirring once, until mixture is heated through, about 3 or 4 minutes.
Remove from heat and drizzle in sesame oil, mixing in.
6. Serve over rice or Asian noodles. Top with onions and sesame seeds if desired.
Serves about 4 to 6 people.

I don't know about you, but I get sort of tired of looking at leftover vegetables in the refrigerator after a big holiday meal. We always have a big veggie tray - crudite - and love it, but we always make way too much. The good news is, since the veggies are all cut up and ready to go, this stir-fry is one of the easiest I've ever made.
This recipe is a nice way to serve leftovers with an entirely different 'flavor profile' so it doesn't get boring eating the same dish over and over again.
