Turkey Frame Stock - Crock Pot |
Ingredients

* 1 leftover turkey carcass picked clean, include the leftover skin, bones, fat
* 3 or 4 stalks celery complete with leaves
* 2 small to medium yellow onions
* 2 bay leaves
* 8 black peppercorns
* 1/2 Tblsp. sea salt
* large crock pot

Directions

1. After you've picked the turkey clean of all good meat, break up the turkey frame and put that and all the bones, etc. into your crock pot.
2. Cover the turkey bones completely with fresh cold water.
3. Add the other ingredients and turn crock pot on HIGH.
4. Let cook on HIGH for 2 hours, checking the water level and ONLY adding water if liquid reduces more than a couple inches.
5. Turn heat on crock pot down to LOW and continue cooking for 8 hours.
6. Remove liner from crock pot and set out to let cool until you can handle it.
7. Pour stock through a colander or strainer into a big soup pot and discard all the bones and vegetables that strained out.
8. Pour stock into small containers for the freezer and refrigerator for future soup and other meals.
Tip: Watch the liquid level and add more water ONLY if it has managed to boil down several inches below the turkey frame. Then only add HOT water to the stock and quickly re-cover.

Part of our day after Thanksgiving routine is picking the turkey clean. It's a great way to start planning what to do with the leftover turkey, but even more importantly, it's a great way to sneak a few bites as you pick! Turkey stock in the freezer is a wonderful way to stretch your budget.
