Two-Step Fruity Pound Cake |
Ingredients

* 1 (20 oz) can pineapple chunks, drained
* 1 lb. green seedless grapes, halved
* 1 lb. strawberries, cleaned and halved
* 1 pound cake, sliced
* optional whipped topping for serving
* a sprinkle of sugar in freezer bag

Directions

1. Place all the fruit in a freezer bag or other container and put in freezer overnight. You can sprinkle the fruit with a tiny bit of sugar if desired.
2. To serve, remove the fruit from freezer and allow to thaw. Put a slice of pound cake on individual plates and divide the fruit mixture evenly over each piece. Top with whipped topping if desired.

This is a great dessert to take to a picnic or the beach. The frozen fruit will stay frozen long enough in a cooler with ice. By the time you're ready to serve it, the fruit will have thawed just enough to get juicy.
I do like adding a bit of sugar to the fruit before I put it in the freezer. When the fruit thaws, the sugar seems to make the fruit a bit juicier, so there is more juice to pour over the pound cake.
