Vegetable Lima Bean Chowder |
Ingredients

* 1 1/2 cups chopped celery
* 1 cup chopped onion
* 1/4 cup butter
* 1/4 cup flour
* 1 1/4 quarts 2% milk
* 4 cans (15 oz each) large lima beans, rinsed & drained
* 16 oz can diced tomatoes, not drained
* 16 oz can whole kernel corn, drained
* 1/2 teaspoon dried oregano leaves
* 1/2 teaspoon dried rosemary leaves
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1 cup shredded sharp cheddar cheese

Directions

1. Melt butter in large saucepan over medium heat, then add celery and onions and saute for 5 or 6 minutes - stirring often.
2. Add flour and cook, stirring constantly for 2 minutes.
3. Add the rest of the ingredients, except cheese and bring to simmer (do not let boil). Cover and simmer for 5 minutes.
4. Add cheese and heat just until melted, stirring very frequently.

Is there a vegetarian in the house? This hearty lima bean and multiple vegetable soup is so filling, that once you try it, you'll keep the recipe handy so you can make it over and over again. Your meat-eaters won't even miss the meat! You can sure serve it as a side dish, as well, but I really think all it needs is some crusty bread!
