Vegetable Chili

Ingredients

* 2 tablespoons butter
* 1 cup finely chopped carrots
* 1/2 cup chopped onion
* 3/4 cup chopped red bell pepper
* 2 teaspoons minced garlic
* 1 can (14 1/2 oz) chili-style diced tomatoes
* 1 can (15 oz) hot chili beans
* 1 can (15 oz) kidney beans
* 1 can (14 1/2 oz) vegetable broth
* 1 cup V8 juice
* 1 tablespoon chili powder

Directions

1. Saute carrots, onion, bell pepper and garlic in hot butter in saucepan over medium heat. Cook until vegetables are just beginning to get tender (about 5-6 minutes), stirring occasionally.

2. Add everything else and bring heat down to medium low. Cook until everything is heated through, about 20 minutes.
