Vidalia Chicken Bake


* 4 lbs mixed chicken parts; breasts, legs, wings, thighs.
* 2 cups flour, seasoned with salt, pepper, and any dry herbs you like (oregano, thyme, etc.)
* 6 vidalia onions, sliced somewhat thick, in rings
* 3 cups chicken broth
* 1/2 cup butter, cut into little pieces


1. Preheat oven to 350.
2. Put seasoned flour in a large food bag and put half the chicken in bag and toss until coated; put coated chicken in a baking dish sprayed with non-stick cooking spray. Repeat with other half of chicken.
3. Place onions on top of chicken then pour broth around chicken in baking dish. Arrange little pieces of butter on onion slices.
4. Bake for 90 minutes.


This is a simple seasoned chicken bake that will appeal to just about everyone you can imagine.

Because vidalia onions are wonderfully sweet, even young children will like this dish, although you may have to get them past the IDEA of eating onions by just calling them "vidalias" until they fall in love with them!
