Vinaigrette Dressed Berries on Fresh Baby Spinach |
Ingredients

* 1 pint ripe strawberries, washed, hulled, sliced
* 1 pint ripe blueberries, washed, dried
* 2 Tbsp red wine vinegar
* 1 Tbsp light olive oil
* 1 Tbsp light brown sugar
* 1 tsp poppy seeds
* 1 Tbsp minced shallot
* 1/8 tsp smokey paprika
* 1/4 tsp kosher salt
* 12 oz baby spinach
* chopped walnuts
* bleu cheese crumbles

Directions

1. Clean strawberries and blueberries and put in large bowl.
2. Whisk together in a separate bowl the vinegar, olive oil, sugar, poppy seeds, shallot, paprika, and salt, until frothy - then pour over berries.
3. Let berries marinade for 30 minutes, stirring frequently.
4. Divide spinach between individual salad bowls. 5. Spoon marinaded berries over the top of each salad, then top with a sprinkling of walnuts and bleu cheese crumbles.
6. Serve immediately.

Marinading the berries in the vinaigrette dressing causes the berries to create a nice, rich, deeply flavored sauce that makes a wonderful dressing for the spinach.
Be sure to use fresh spinach. Wash and dry it well so your dressing doesn't become watered down. Enjoy this salad as a main course or as a side for grilled meat, fish, or poultry. Grilled or roasted duck is especially delicious paired with this salad.
