Wild Rice Pilaf


* 1 tablespoon olive oil
* 1 large onion, chopped
* 2 large carrots, chopped
* 2 stalks celery, sliced
* 2 cloves garlic, minced
* 3 1/2 cups vegetable broth
* 1/2 cup uncooked wild rice
* 1 cup uncooked regular long-grain white rice


1. Saute onion, carrots, celery and garlic in oil until tender. Add broth and wild rice and bring to a boil, stirring occasionally. Bring heat down to low, cover and cook for 25 minutes.
2. Add white rice, then cook (covered) for another 20 minutes.


Wild rice adds a great nutty flavor to this classic dish. I like to add a few toasted almond slivers to the top with just a sprinkle of chopped fresh parsley or even chives if your family likes a little extra oniony taste. Served alongside some grilled chicken, this meal is pretty enough for company.
