Zesty Lemon Sunshine Muffins |
Ingredients

* 1/3 cup butter, room temperature
* Splenda to equal 1/2 cup of sugar
* 1/2 cup of regular sugar
* 4 egg whites
* 2 Tbsp lemon zest
* 2 cup of flour
* 1 tsp baking soda
* 1 cup of fat-free plain yogurt

Directions

1. Turn oven on to 375 degrees and let preheat.
2. Spray a 12 compartment muffin tin well with a non stick cooking spray or use paper liners.
3. Beat the butter, sugar substitute and regular sugar together until crumbly.
4. Beat in the egg whites.
5. Add the lemon peel and stir until well combined.
6. In a separate bowl whisk together the flour and baking soda.
7. Alternating between the flour mixture and yogurt add a little a time stirring after each addition.
8. Fill the muffin cups 2/3 full of the batter.
9. Bake 16 to 18 minutes or until a toothpick inserted in the center comes out clean.
10. Cool 5 minutes in the pan then remove to a wire rack to cool completely.

These muffins are lemony and taste like sunshine! The aroma while they're baking gets everybody up and rolling in the morning. They're also moist and could easily be topped with a cream cheese frosting if you wanted to make a dessert muffin rather than breakfast muffin.
