15 Minute Black Bean Soup

Ingredients

* 2 T. oil
* 3 Garlic Cloves, chopped
* 1 onion Chopped
* 1/2 tsp. Oregano
* 3 tsp of Chili Powder
* 3 Cans of Black beans divided
* Black pepper to taste
* 2 Cans of water

Directions

Saute onions in oil.
Add Garlic, Chili Powder and Oregano and stir.
Puree 1 can of beans and add to onion mixture.
Add remaining beans and your 2 cups of water.
Simmer for 15 minutes.
Add pepper

You can garnish each bowl with salsa, shredded cheese, or crackers.
