4 Layer Floret Salad |
Ingredients
|
*6 C broccoli florets, cooked crisp/tender and drained
*3 C cauliflower florets, cooked crisp/tender and drained
*1/2 C of raisins
*1/3 C walnuts, broken
*1/4 C salad oil
*1/4 C apple cider vinegar
*1 tsp salt
*1 tsp honey
*1/2 tsp dried basil
*1/2 tsp black pepper

Directions

1. Place half the broccoli and half the cauliflower into a large salad bowl.
2. Sprinkle with half the raisins and half the walnuts.
3. Repeat the layers (broccoli, cauliflower, raisins, walnuts),cover and refrigerate for at least 2 hours.
4. In separate bowl, whisk the oil, cider vinegar, salt, honey, basil and pepper together and pour evenly over the salad. Let this sit for 1 minute and serve.

Sweet, salty, and crunchy always is a nice combination in a salad. This broccoli and cauliflower salad is a great way to get your kids to fall in love with vegetables. They can hardly resist when they are digging their way through raisins, too! Grown ups will appreciate the flavorful dressing which is also sweet and salty, but also tangy. Enjoy!
Remember... don't over cook your veggies. You just want your broccoli and cauliflower to be crisp-tender, meaning they should still have a little 'snap' to them. The moment you can push a knife through them as they're cooking, drain them and run very cold water over them to stop the cooking process.
