A Cooler Side to Macaroni Salad |
Ingredients

* 1 (16 oz) box of macaroni
* 2 large tomatoes, chopped
* 1 medium onion, chopped
* 2 medium cucumbers, sliced thin
* 1/4 C vinegar
* 1/4 C mayonnaise
* Sugar or sugar substitute to taste

Directions

1. Bring a large sauce pan of water to a boil.
2. Add the macaroni and bring back to a full boil.
3. Reduce heat to medium low and continue cooking the macaroni until soft but not sticky about 10 minutes.
4. Drain the water from the macaroni and rinse under cold water.
5. Drain the macaroni again.
6. Place the macaroni in a large bowl.
7. Fold in the tomatoes and onions.
8. Add the cucumbers and mix together.
9. Pour the vinegar in a separate mixing bowl.
10. Gently fold in the mayonnaise.
11. Continue to stir until the mixture becomes smooth.
12. If desired, sprinkle in the sugar or sugar substitute a little at a time until you reach the taste you want.
13. Pour the mixture over the macaroni and vegetables and stir until completely covered with the mixture.
14. Cover and refrigerate at least 2 hours.
15. Stir before serving.

There are a lot of varieties to the good ol' macaroni salad, but this one is a nice classic. It doesn't stray too far from the simple garden ingredients of tomatoes, onions and cucumbers which makes it kind of nostalgic. The simple mayonnaise and vinegar also gives it that old fashioned appeal. Grandma will like this one!
