Asparagus Tossed with Cold, Creamy Garlic Sauce |
Ingredients

* 2 TBSP nonfat or low-fat sour cream
* 1 TBSP low-fat buttermilk or skim milk
* 1 clove garlic, grated or minced (time to invest in that garlic grater!)
* 1 tsp grated lemon peel
* 24 fresh asparagus spears, minus woody bases
* Poppy seeds (optional)

Directions

1. In a small bowl, combine garlic, buttermilk, sour cream and lemon peel.
2. Cover and chill.
3. Cook asparagus in boiling water until crisp-tender. Drain, rinse with cold water and drain again.
4. Cover and chill.
5. When it's serving time, toss asparagus with garlic/milk mixture.
6. Sprinkle lightly with optional poppy seeds.
7. Serve alongside main dish.

This is a nice cold side dish that compliments so many summer meals that it's hard to choose. A good lemon and pepper fresh fish on the grill would be excellent. Or chicken breast, grilled and sliced thin alongside would be good, too. I can't think of many summer dishes that you wouldn't want to try with this great, cold and creamy asparagus dish. Enjoy!
