Bacon Lettuce Tomato and More Salad |
Ingredients

* 1 head of iceberg lettuce, chopped up bite size
* 1/2 C celery, diced
* 1/2 C green onions, chopped
* 1 can water chestnuts, sliced
* 2 (10 oz) pkgs. frozen peas
* 1 C mayonnaise
* 1 C sour cream
* 1 Tbsp sugar
* 1/2 C Parmesan cheese
* 10 slices bacon, cooked crisp and crumbled
* 5 hard boiled eggs, chopped
* 6 small tomatoes cut into wedges

Directions

1. Place the chopped lettuce into a large salad bowl.
2. Add in the celery, onions, water chestnuts and the peas.
3. Toss to mix with the lettuce well.
4. Whisk together the mayonnaise, sour cream, sugar, and Parmesan cheese.
6. Cover and refrigerate the salad for at least 1 hour.
7. Remove the salad and stir well.
8. Layer the bacon, eggs and tomatoes over the top of the salad just before serving.

This has all the makings of a BLT, but all mixed together in a hearty salad. This won't be like a tossed salad, it is creamy, salty, sweet, and sticks to your ribs when you eat it!
