Bacon Tomato Easy Risotto Skillet |
Ingredients

* 8 oz. smoked bacon, chopped into little pieces
* 1 onion, diced
* 1 oz. butter
* 10 oz. of risotto rice (short grained round white rice)
* Half a glass of white wine (may substitute 4 oz of chicken broth)
* 6 oz. cherry tomatoes, halved
* 3 C of hot chicken stock
* 2 oz. Parmesan, grated and divided

Directions

1. Fry the bacon in large, heavy skillet until it is crisp, remove and drain well on paper towels.
2. Put the onion and butter in skillet and cook 5 minutes or until the onion is soft.
3. Mix the rice in with the butter and onion.
4. Add the wine and cook the mixture until the wine is completely absorbed.
5. Stir in the tomatoes and chicken stock.
6. Cover the skillet and cook for 18 minutes.
7. Stir in 1 1/2 oz. of the Parmesan cheese.
8. Cook an additional 2 minutes.
9. Sprinkle with the remaining Parmesan before serving.

Be sure to use white rice for your risotto that is short-grained and round or semi-round. No long grain or brown rices. One of the best for risotto is Arborio. No Minute Rice, please. It won't work.
I like this recipe because it's less time consuming than most risotto recipes, but still turns out very well. But don't try to serve this at an Italian family gathering. This is not strictly authentic and won't make it past Nonna!
