Baked Fish with Herb Stuffing Crust |
Ingredients

* 1/2 C herb stuffing mix, crushed very fine
* 2 TBSP of margarine, melted
* 4 frozen fish portions
* 2 tsp lemon juice

Directions

1. Preheat the oven to 425 and spray a baking dish with cooking spray.
2. Mix the stuffing mix and margarine together in a bowl.
3. Place the fish into the baking dish and sprinkle with the lemon juice.
4. Spread the stuffing over the top and bake 18 to 20 minutes.

I know you've got one of those boxes of Stovetop in your pantry right now! This is one of the simplest and yummiest ways to use that stuffing mix. I've often made chicken dishes with it, but never thought about using it on fish until I looked in the freezer and saw lots of fish and no chicken. I thought "why not?" and one of our favorite quick dishes was born. Give it a try!
