Bean Soup with Sausage - Crock Pot |
Ingredients

* 1 cup dried small white beans, rinsed and drained
* 1 can (28 oz) diced peeled tomatoes (not drained)
* 2 cans (14 1/2 oz each) chicken broth
* 1 medium onion, chopped
* 2 garlic cloves, minced
* 1 package (10 oz) frozen chopped spinach, thawed but not drained
* 1 tablespoon dried basil
* 1/2 teaspoon ground pepper
* 1/2 lb smoked turkey sausage, halved lengthwise and thinly sliced

Directions

1. Put in crock pot: beans, tomatoes, broth, onion, garlic, spinach, basil and pepper. Stir well.
2. Cover and cook on low for about 9 hours, until the beans are tender. Add sausage, cover and cook for another 1/2 hour.

If you've tried making bean soups before, and found them to be somewhat bland, here's your answer. This crock pot recipe uses a lot of spices, then adds spinach, which is the ultimate flavor enhancer. Then, just when you think the aroma can't get any better, you throw in the smoked sausage! You won't ever suffer from a bland bean soup again!
