Beef and Black Bean Soup - Crock Pot |
Ingredients

* 1 lb ground beef, browned and drained
* 2 cans (14 1/2 oz each) chicken broth
* 1 can (14 1/2 oz) diced tomatoes
* 8 green onions, sliced
* 3 carrots, sliced
* 2 celery ribs, chopped
* 2 garlic cloves, minced
* 3 teaspoons italian seasoning
* 1/2 teaspoon salt
* 1/2 teaspoon cumin
* 1/2 teaspoon chili powder
* 2 cans (15 oz each) black beans, rinsed and drained
* 1 1/2 cups cooked rice

Directions

1. Place all ingredients, except black beans and rice, in crock pot. Mix well.
2. Cook, covered, on high for 1 hour. Bring heat down to low and cook another 5 hours.
3. Stir in the beans and rice. Cook another hour, covered and on low.

Black beans are a staple in my house, and I make a lot of soup. My husband, who believes meat should be the center of every meal, wouldn't dream of having black bean soup without beef. This beef and black bean combination is rich and spicy enough for both of our tastes. The kids like it, too!
