Beef Vegetable Mac & Cheese Casserole |
Ingredients

* 1 lb ground beef
* 1/2 cup chopped onion
* 8 oz can whole kernel corn, not drained
* 8 oz can tomato sauce
* 1/4 cup sliced black olives
* 2 cups uncooked elbow macaroni
* 2 cups water
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1 cup shredded sharp cheddar cheese

Directions

1. Preheat oven to 375.
2. Brown ground beef with onion; drain fat.
3. Combine beef and onion with remaining ingredients. Stir to mix well.
4. Pour into baking dish, cover and bake for 30 minutes.
5. Uncover dish, stir and bake another 15 minutes or until top starts to get a little crispy around the edges.

Every once in awhile we just have to cook one of those "school days" casseroles in our house. There's just something so comforting about a big casserole filled with beef, veggies, noodles, and cheese. Cafeteria dining at its finest! Enjoy!
