* 1 can (15 oz) black beans, rinsed and drained
* 1 cup frozen corn, thawed
* 6 oz roasted red bell pepper, chopped
* 1/2 cup onion, chopped
* 1/3 cup salsa
* 2 tablespoons cider vinegar
* 2 oz mozzarella cheese, cubed
Directions
1. Combine everything but the cheese and 1 tablespoon of the onion in a bowl. Let stand for 15-20 minutes before serving.
2. Add the cheese and top with remaining onion.
Story
Be sure to let this salad stand for the recommended amount of time so the flavors have a chance to blend. Then throw the cheese in and dig in! This salad is very satisfying and all the different textures really make it a hit in my house.
