Blue Cheese Roast Beef Sandwiches |
Ingredients

* 4 whole wheat sub rolls, lightly toasted
* real mayonnaise
* 16 fresh basil leaves (You can cut these into ribbons if you don't want to bite into a whole basil leaf.)
* 1 lb thinly sliced cooked deli roast beef
* 3/4 cup crumbled blue cheese
* 1/2 cup toasted walnuts pieces

Directions

1. Toast sub rolls on cookie sheet in oven under broiler until just lightly golden brown, turning to toast both sides. You may butter open side if desired.
2. Spread mayonnaise on open sides of each toasted roll.
3. Distribute the roast beef slices evenly between the 4 roll bottoms and top with 4 basil leaves each.
4. Top each evenly with the blue cheese (about 2 tablespoons each).
5. Then distribute the walnuts evenly on top of the cheese.
6. Close each sandwich with the top half of the roll.

This is a great meal for a lazy afternoon watching movies (or the game) at home with a couple friends. I'm a big fan of blue cheese. It packs a lot of flavor in a little crumble!
