Braised Lemon Sea Scallops |
Ingredients

*1 1/2 lb. fresh sea scallops
*3 tsp butter, divided
*1 C of chicken broth
*1 tsp lemon zest grated
*2 tbsp lemon juice
*1 1/2 tsp cornstarch
*1 tsp garlic, minced
*1/4 tsp salt
*1/8 tsp pepper
*1 tbsp fresh parsley, chopped

Directions

1. Brown 2 tsp of butter in a skillet, stir in the scallops and cook 5 minutes on medium high heat, turning often then remove to a platter.
2. Whisk the remaining ingredients except the parsley together and pour into the skillet.
3. Stirring constantly bring the mixture to a boil then boil 1 minute.
4. Pour the sauce over the scallops before serving.

Simple to make but oh so delicious! Don't use really big scallops if you're afraid of not getting them cooked right. If they are not cooked through they can have a texture that some people don't like. And if they're cooked too long they can get touch. Get smaller scallops and cook them on a medium hot skillet, very quickly.
