Broccoli Cauliflower Salad With Bacon |
Ingredients

* 1 cup mayonnaise
* 1/4 cup vinegar
* 1/4 cup sugar (adjust, start with less)
* 1 head of broccoli, cut up into bite sized pieces **
* 1/2 head of cauliflower, cut into bite sized pieces **
* 1 small red onion, finely chopped
* 2 ribs of celery, chopped
* 1 lb bacon, browned & crumbled
* optional: smoked almonds, chopped, may be substituted for bacon
** I lightly blanch raw broccoli and cauliflower before adding to salad to brighten up the flavor. Be sure to quickly cool in ice bath and drain well.

Directions

1. Mix first three ingredients in a large salad bowl.
2. Add the broccoli, cauliflower, onion, and celery, and toss to coat.
3. Cover and refrigerate for 3-4 hours.
4. Top with bacon before serving.
5. Substitute smoked almonds, chopped up, for bacon.

The last time I was at a potluck, I saw thirteen of these broccoli-cauliflower salads on the tables! I believe the reason is they are so simple to make and offer such great nutrition for your money. One option I like is, if you are not a bacon eater, chop some smoked almonds up and sprinkle those on top instead. Same smokey taste, better for you!
