Buttery Rosemary Herbed Fish Bake |
Ingredients

* 1 tablespoon butter, melted
* 1/2 teaspoon chopped rosemary
* 1/2 teaspoon basil
* 1/8 teaspoon cayenne pepper
* 1/4 teaspoon garlic powder
* 2 tablespoons lemon juice
* 1/4 teaspoon salt
* 1 teaspoon pepper
* 1 lb firm white fish fillets, thawed

Directions

1. Preheat oven to 400.
2. In a bowl, whisk together all the ingredients except the fish.
3. Put the fish in a baking dish and pour 1/2 the mixture over the fish, flip the fish, and pour the other 1/2 over the fish.
4. Bake uncovered in oven for 20 to 30 minutes, depending on thickness of fillets. When fish flakes apart easily and is no longer translucent, it is done cooking.
5. Serve hot alongside fresh green salad and your favorite rice.

The cayenne pepper gives this fish a little bite, but the real winner is the combination of rosemary and basil. You don't often see rosemary, especially, used in baked fish dishes. Normally you associate rosemary with pork dishes. Because of the spicy cayenne, the rosemary doesn't overpower the delicate flavor of the fish. This is a great recipe to help avoid 'fish boredom' from too many fish-lemon-butter dishes.
