1. Cover a baking sheet with parchment paper then spray paper with nonstick cooking spray.
2. Beat egg white until stiff, stir in brown sugar and vanilla.
3. Add pecans and stir until all coated.
4. Place coated pecans on baking sheet and bake at 275 degrees for 12 minutes or until nicely browned.
5. Cool, and break up. Store in airtight container.
