Cauliflower Black Olive Salad

Ingredients

* 4 Cups cauliflower florets, bite size
* 1 Cup of black olives, slices
* 3/4 Cup green bell pepper, chopped fine
* 1/4 Cup onion, chopped

* 1/4 Cup canola oil
* 3 TBSP white wine vinegar
* 3 TBSP lemon juice
* 1/2 tsp salt
* 1/4 tsp pepper

Directions

1. Mix cauliflower, olives, peppers, and onion together in a big bowl.
2. In a different bowl, whisk together the oil and vinegar.
3. Add in the lemon juice, salt and pepper and whisk until blended in well.
4. Pour the mixture over the cauliflower mixture and stir well.
5. Cover tightly and place in refrigerator overnight.
6. Before serving stir again to help incorporate all the flavors together.

Story

We happen to be big fans of black olives (or ripe olives, as some people call them) in our house. This is a great recipe that actually uses black olives as a main ingredient, rather than deligating them to just an afterthought.

I like to give the cauliflower a very quick blanching or microwaving to just bring out the flavor a little more than when they are strictly raw.
