Cauliflower Curry Soup - Crock Pot

Ingredients

* 1 large head cauliflower, chopped
* 1 can (28 oz) diced tomatoes (not drained)
* 1 can (14 1/2 oz) vegetable broth
* 1 medium onion, chopped
* 1/2 teaspoon garlic powder
* 2 1/2 teaspoons curry powder
* 1/8 teaspoon ground cumin
* salt and pepper to taste

Directions

1. Stir together the cauliflower, tomatoes, broth, onion and garlic powder in crock pot.
2. Cover and cook on low 7 - 7 1/2 hours.
3. Turn heat up to high and add curry powder and cumin. Salt and pepper to taste. Stir well. Cover and cook for another 30-45 minutes.
