1. In a glass bowl, mix together the cheese, mayonnaise, grated onion, hot sauce, and green onion. Mix until well blended.
2. Add the almonds and stir until just blended, taste and add salt if desired and mix again.
3. Transfer to a clean, pretty bowl; cover and refrigerate for several hours. The longer you let it sit, the better the flavors will develop. To serve, set out at room temperature for a few minutes, then put out with a cheese spreader alongside and serve with celery sticks or crackers.

This recipe can easily be doubled, tripled, or quadrupled if needed. Mix it all up then divide it into small bowls for serving.
Be sure to use very finely shredded Cheddar cheese so the ingredients combine easily.
Note: Roast your own almonds for the best flavor and to control the salt. Buy raw almonds and roast in a moderate (375 degree) oven until fragrant and starting to darken slightly. Remove and add salt if you like while the almonds are still hot.
