Cheddar Bacon Breakfast Bites

Ingredients

* 1 egg
* 1 (24 oz) pkg. shredded hash browns, thawed
* 1 1/2 C shredded Cheddar cheese
* 1/2 C sour cream
* 1/3 C real bacon bits

Directions

1. In a mixing bowl put the egg and beat slightly with a fork.
2. Add the shredded hash browns in the egg and mix together.
3. Set oven to 400 degrees.
4. Spray a mini muffin pan with non-stick spray.
5. In each muffin tin put 1 TBSP of the potato mixture.
6. Press the mixture into the bottom and up the side of the tins to form a little cup.
7. Place in the oven and bake 20-30 minutes.
8. Remove from oven and sprinkle with the cheese.
9. Return to the oven until the cheese has completely melted about 3 minutes.
10. Allow them to cool slightly and top each with a dollop of sour cream.
11. Sprinkle bacon bits on top of the sour cream.
12. These are best if served slightly warm.

Story

These little cheesy hash brown "muffins" make a great side in the morning with eggs. If you've got some hash brown lovers in your house, surprise them with this unusual way to serve their favorite breakfast treat. They're so cute, even our littlest loves them!
