Cheddar Bacon Cajun Jalapenos |
Ingredients

* 16 slices thick bacon strips
* 16 large jalapeno peppers
* 2 (3 oz) pkgs. cream cheese, room temperature
* 1 C cheddar cheese, finely shredded
* 1 tsp Cajun seasoning

Directions

1. First cut the bacon slices in half and place in a large skillet over medium heat.
2. Cook for 3 minutes, turn and cook another 2 minutes.
3. Remove the bacon to a paper towel and cool just enough to handle.
4. Cut the peppers in half vertically and remove the seeds and white membrane.
5. Using cold water rinse the peppers and lay on paper towels to dry.
6. In a mixing bowl place the cream cheese.
7. Beat with an electric mixer on the low setting until smooth.
8. Add the cheddar cheese and seasoning.
9. Combine the ingredients using a rubber spatula.
10. Each pepper half is stuffed with 1 tsp of the cream cheese mixture.
11. The oven temperature is set at 350 degrees.
12. Wrap each pepper half with a slice of bacon and secure with a toothpick.
13. Place the wrapped pepper on a wire rack that has been placed in a shallow baking pan.
14. Bake 25 minutes or until the bacon becomes crisp.
