Cheddar Broccoli Bacon Salad |
Ingredients

* 2 heads of broccoli, cut into bite-size pieces
* 1/2 C red onion, chopped
* 1/4 C black pitted olives
* 1 C cheddar cheese, shredded
* 1/2 C mayonnaise
* 1/2 C natural yogurt
* 1/4 C white wine vinegar
* dash sugar
* 8 slices bacon, fried, drained and crumbled
* 2 tbsp sesame seeds

Directions

1. Place the broccoli, onion, olives and cheese into a bowl and toss.
2. In a bowl whisk together the mayonnaise, yogurt, vinegar and sugar.
3. Pour the dressing over the broccoli and toss gently.
4. Cover and chill at least 2 or 3 hours.
5. Sprinkle the bacon and sesame seeds evenly over the top before serving.

Looking for more ways to serve broccoli to your family? This recipe is a real winner in our house because it's got cheese in it, which always goes over well the kids.
Even though a lot of broccoli salads call for raw broccoli, I still prefer the flavor of broccoli if you just give it a little bit of heat.
I usually steam it quickly until the color just starts to change, then rinse it under cold water quickly to stop the cooking. You can microwave it for 30 seconds or so. Raw broccoli tastes a little bitter to me and when you cook it even briefly it tastes a little sweeter.
