Cheesy Bacon 'n' Almond Green Bean Casserole |
Ingredients

* 4 bacon slices
* 1 C onion, sliced
* 1/2 lb processed cheese, cubed
* 1/4 C of milk
* 2 (9 oz) pkgs. frozen cut green beans, thawed
* 1/4 C almonds, slivered
* 1/4 tsp black pepper
* optional: 1/2 C butter flavored crackers, crushed

Directions

1. Set the oven temperature to 350 degrees and allow the oven to preheat.
2. In large heavy skillet, cook the bacon over medium heat until crisp.
3. Remove bacon and set on paper towels to drain, then crumble up.
4. Cook the onion in the pan with bacon drippings.
5. Add the cheese and milk to the onions in the pan, stirring until the cheese is melted
6. Stir in the beans, crumbled bacon, almonds, and black pepper.
7. Transfer the mixture to a 1-1/2 quart baking dish.
8. Bake 15 - 20 minutes or until bubbly and heated through.
9. Optional: top with crushed buttery crackers, place back in oven for just a few minutes until heated through.

It's not hard to see why this green bean casserole is an all time favorite kid-friendly recipe. Most kids will eat anything with cheese on or in it. However, no matter how many varieties of cheese you try to introduce your kids to, they always return to their favorite processed cheese. Not exactly a well-defined palate, is it? But, hey, the kids are eating their veggies, so whatever works! This is actually a very tasty dish, for grown-ups, too.
