Cheesy Green Bean Ranch Style Quiche

Ingredients

* 1/2 C fresh green beans cut into 1 in. pieces
* 3 tbsp butter
* 1 onion, chopped
* 1/4 C red bell pepper, chopped
* 1/4 C fresh mushrooms, sliced
* 6 eggs
* 1/4 C bread crumbs
* 1/2 C ranch salad dressing
* 1/3 C Cheddar cheese, shredded
* 1/4 C Parmesan cheese, grated

Directions

1. Cover the green beans with water in a saucepan.
2. Over medium high heat bring the water to a boil and cook 4 minutes.
3. Drain the beans well, place in a bowl and set aside.
4. In a skillet over medium heat melt the butter completely.
5. Stir the onions into the butter and cook 4 minutes or until soft.
6. Add the peppers and mushrooms and cook for another 2 minutes.
7. Remove the pan from the heat and stir in the green beans.
8. Beat the eggs with a fork in a mixing bowl.
9. Fold the bread crumbs and dressing into the beaten eggs.
10. Add the vegetables to the egg mixture and stir to combine well.
11. Butter a quiche pan well.
12. Place the vegetable mixture into the prepared quiche pan.
13. Sprinkle the Cheddar and Parmesan cheeses evenly over the top.
14. Bake in a preheated 350 degree oven for 22 minutes or until set.

My family likes an alternative to the classic green bean casserole on the holiday dinner table. This recipe appeals to kids and grown ups both.

If you have holiday plans that include a luncheon or other light meal, this quiche goes over very well as a main dish for a simple get together when you don't want to stuff yourself... again!
