Cheesy Rice 'n' Carrot Casserole

Ingredients

* 2 1/2 cups shredded carrots
* 8 oz shredded cheddar cheese
* 2 cups cooked rice
* 2 eggs, beaten
* 1 1/4 cup milk
* 1 tablespoon butter, melted
* 1 tablespoon dried onion (optional)
* salt and pepper to taste

Directions

1. Turn oven on to 350 degrees.
2. Spray a baking dish with non-stick cooking spray.
3. Combine all ingredients in a large bowl.
4. Transfer to your prepared baking dish.
5. Cover and bake at 350 degrees for 35 to 40 minutes.

Story

With little kids in the house, I have to find dishes that they'll like, besides PB&J sandwiches and Mac 'n' Cheese. This carrot and rice casserole is very kid friendly because I know most kids like carrots, rice is pretty easy, and the cheese just clinches the deal!
