Chicken Chow Mein Casserole |
Ingredients

* 2 cups chopped celery
* 1/4 cup chopped onion
* 2 Tblsp. cooking oil
* 2 cups cooked chicken, diced
* 1 can cream mushroom soup
* 1 can cream celery soup
* 1/4 cup milk
* 1 1/2 cups chow mein noodles
* cashews (optional)
* 4 cups cooked rice for serving

Directions

1. Put the first three ingredients in a large heavy skillet over medium heat and cook until celery and onion is slightly transparent.
2. Add the remaining ingredients to skillet and stir well, cooking 1 minute until it starts to bubble.
3. Turn mixture into a small casserole dish and top with chow mein noodles and cashews.
4. Bake uncovered in 350 degree oven for 45 to 50 minutes. Serve over cooked rice.

If this casserole looks familiar it may be because you had it at your grade school cafeteria. This is one of those comfort-casserole dishes I remember from our country school. Simple but yummy. I hope you enjoy it!
