Chicken Marinara Pasta - Crock Pot |
Ingredients

* 1 1/2 lbs boneless skinless chicken breasts, cubed
* 2 tablespoons olive oil
* 2 onions, chopped
* 1 zucchini, chopped
* 1 green bell pepper, chopped
* 2 garlic cloves, minced
* 28 oz can crushed tomatoes
* 15 oz can diced tomatoes
* 1 envelope chicken gravy mix
* 1 1/2 teaspoons dried basil
* 1 1/2 teaspoons dried oregano
* Hot cooked pasta - your choice

Directions

1. Lightly brown chicken in hot oil in skillet.
2. Transfer to crock pot.
3. Add remaining ingredients, except pasta, and stir to mix well.
4. Cover and cook on LOW for 8 hours.
5. Serve over hot cooked pasta.

We like cooking up a batch of this for days when everybody is running in opposite directions.
It's easy to cook up a pot of pasta and put it in the refrigerator for everyone to help themselves.
Hint: When you drain the pasta, put it back in the pot, and quickly ladle out enough of the sauce in the crock pot to moisten the noodles. That will keep the noodles from sticking together when they sit in the refrigerator.
The pasta heats up very quickly when you spoon on some of the Chicken Marinara sauce on top. If you need a little help heating the pasta, just throw it in the microwave for a minute.
