Chicken & Swiss Cheese Mini-Muffin Meal |
Ingredients

* 3/4 C shredded Swiss cheese
* 1/4 C shredded Mozzarella cheese
* 1 C skim milk
* 1 3/4 C baking mix
* 1/4 tsp salt
* 1/2 C chicken breast meat, cooked and diced fine

Directions

1. Heat the oven to 400 degrees.
2. Spray the cups of a mini muffin tin with a non stick cooking spray.
3. Place the Swiss and Mozzarella cheese in a large mixing bowl and toss to combine thoroughly.
4. Pour in the milk.
5. Gradually add the baking mix stirring as you add.
6. Continue stirring until the baking mix is completely moistened and no large lumps appear.
7. Sprinkle in the salt, stirring to incorporate into the batter.
8. Fold in the chicken making sure it is completely mixed into the batter.
9. Fill each muffin cup almost to the top with the batter.
10. Bake 12 minutes or until a pretty golden brown.
11. Muffins are done when a toothpick inserted in the center comes out clean.

These are a Meal-on-the-Go that grown-ups and kids alike love. You can pop one or two in your mouth and go. They are great lunch box fare too. Beats a peanut butter and jelly sandwich in my book.
