Chicken Wonton Southwest Style |
Ingredients

* 1 lb. boneless skinless chicken breasts cut to 1 in. pieces
* 1 envelope reduce sodium taco seasoning
* 1 (16 oz.) jar low sodium salsa, divided
* 1 (8 oz.) pkg. low fat cheddar cheese, divided
* 1 onion, chopped
* 36 wonton wraps

Directions

1. Spray a large skillet with a non stick cooking spray.
2. Place the chicken and taco mix together in the skillet and stir to coat.
3. Place the skillet over medium heat and cook 7 minutes or until the chicken is no longer pink.
4. Place the salsa, half the cheese, and the onion into a mixing bowl, stir until combined.
5. Fold the chicken mixture into the salsa mixture until well combined.
6. Set the oven temperature to 375 degrees.
7. Spray a mini muffin tin with a non stick cooking spray.
8. Place the wonton wraps into each of the prepared muffin cups.
9. Bake 4 minutes or until the wraps are a golden brown.
10. Remove the tin and fill each wrap with a spoonful of the chicken mixture.
11. Sprinkle the remaining cheese over the top of each cup.
12. Return to the oven and bake an additional 5 minutes or until the cheese has melted.
